Baked quinces

(4-6 portions)

  • 3 large quinces
  • juice of 1 lemon
  • 80 g (90 ml) butter
  • 100 g (125 ml) sugar
  • 50 ml water

Heat oven to 180°C. Wash quinces and rub off the fuzz. Quarter quinces and put in an oven roasting pan. Pour lemon juice over immediately. Dot quinces with butter and sprinkle sugar on top. Pour water into the dish and put in warm oven. Bake about 1 ½ hours until soft. Turn quinces every now and then. Serve with lamb shanks.

HINT: Lemon juice keeps the quinces from browning.
