Chocolate and pecan nut muffins

(6 large muffins)

  • 280 g (500 ml) cake flour
  • 65 g (160 ml) cocoa
  • 10 ml baking powder
  • pinch of salt
  • 100 g (125 ml) sugar
  • 250 ml chocolate chips
  • 100 g pecan nuts, roughly chopped
  • 330 ml milk
  • 80 ml sunflower oil
  • 2 large eggs
  • 5 ml vanilla essence

Heat the oven to 200 °C. Line muffin pans with paper muffin cups, which you can spray with Spray & Cook. Sift together flour, cocoa, baking powder and salt in a large mixing bowl. Add sugar and mix well. Add chocolate chips and pecan nuts. Beat together the milk, oil, eggs and vanilla. Fold into the flour mixture. Don’t stir. Divide the dough between your muffin pans. Bake for 20 – 24 minutes until done – test with a thin skewer.
