Chocolate chip bread-and-butter muffins

6 large muffins

  • 1 large French loaf (of about 60 cm)
  • 250 ml cream
  • 250 ml milk
  • 4 eggs, beaten
  • 130 g (160 ml) sugar
  • 5 ml vanilla essence
  • 90 ml butter, melted and cooled
  • 45 g (80 ml) cake flour
  • 2 ml baking powder
  • 1 ml salt
  • 250 ml chocolate chips

Preheat oven to 180 °C. Line muffin tins with baking paper. Cut French loaf into cubes. Put cubes in a large mixing bowl and pour cream and milk over them. Let stand for 20 minutes. Add beaten eggs, sugar, vanilla and molten butter. Mix well. Sift flour, baking powder and salt together in a separate bowl. Add chocolate chips to flour mixture. Combine flour mixture and bread mixture and mix well. Spoon into muffin tins. Put on a baking tray and bake for 25 – 30 minutes. Test with a thin skewer to see if centres of muffins are dry. Take out of oven and allow to cool.
