Flat Turkish bread

(4 oval loaves of about 18 cm long)

  • 2 packets (10 g each) instant yeast
  • 10 ml sugar
  • 600 g white bread flour
  • 5 ml salt
  • about 300 ml lukewarm water

Mix yeast, sugar, flour and salt in a large mixing bowl. Make a hollow in the middle of dough and add water. Mix well and turn out on a surface that has been sprinkled with flour. Very important: Knead the dough for at least 15 minutes until elastic. Grease a bowl lightly with some olive oil, and place dough in bowl. Brush a bit more olive oil over the dough. Cover with clingfilm and place in a warm area. Allow to rise to twice the initial quantity. This can take up to 2 hours. Knead dough down and shape into 2 long oval loaves. Sprinkle flour on baking tray and place loaves on tray. Sprinkle more flour over the top and allow to rise again to twice the size. Heat oven to 240 ºC. Put loaves in hot oven and bake for 10 minutes. The bread is best served warm, especially with hummus.
