Pumpkin mash

(4 portions)

  • 500 g pumpkin, cut into slices (don’t remove peel)
  • 100 g (125 ml) sugar
  • 2 ml salt
  • 25 ml butter
  • 2 slices white bread, cut into 9 squares
  • 3 cinnamon sticks
  • 125 ml water, boiled

Heat oven to 190°C. Put a layer of pumpkin in the bottom of an ovenproof dish with a lid. Sprinkle with sugar and salt, dot with butter, and add 3 squares of bread and 1 cinnamon stick. Repeat the layers. Lastly, pour boiled water over the other ingredients and put on the lid. Bake about 1 ½ to 2 hours until pumpkin is soft.
