Quick raisin bread

A warm slice of raisin bread with butter is fit for a king.

  • 240 g (430 ml) cake flour
  • 15 ml baking powder
  • 2 ml salt
  • 80 g (100 ml) sugar
  • 100 g (110 ml) butter
  • 150 g seedless raisins
  • 1 egg
  • 150 ml milk

Heat oven to 190˚C. Sift together flour, baking powder, salt and sugar. Rub butter into flour mixture until it looks like breadcrumbs. Add raisins. Whisk egg and milk and stir into dry ingredients to form a soft dough. Put in greased baking tin of about 20 cm x 10 cm. Bake in hot oven for 30-35 minutes. Test with a testing pen to make sure the bread is done.
