Turkish delight

(About 16 pieces of 2 x 2 cm each)

  • 12 sheets of gelatin
  • about 400 ml water
  • 400 g (500 ml) sugar
  • 35 g (75 ml) corn flour
  • 1 ml citric acid
  • 200 ml water
  • 10 ml rose water
  • Pink food colouring
  • 50 g (105 ml) corn flour
  • 50 g (95 ml) icing sugar

Soak gelatin in 400 ml water for about 5 minutes. Grease a pan of 12 x 12 cm and about 5 cm deep with cooking oil. Take gelatin out of water and squeeze the water out. Combine sugar, corn flour, citric acid and 200 ml water in a pot. Heat over low heat until sugar is dissolved. Let boil for 7 minutes and add rose water and soaked gelatin. Stir until gelatin is melted. Add some food colouring and pour into greased pan. Allow to cool a bit, then refrigerate for about 4 hours until set. Dip bottom of pan in a bowl of hot water, for literally just a second or two, so the confection can loosen. Sift together the corn flour and icing sugar. Cut confection into cubes or shapes of your choice and roll them in the sifted mixture.

Tip If you can’t find gelatin sheets, use 30 ml of granulated gelatin dissolved in 50 ml water. Mel the gelatin over hot water, then follow the recipe above.
