Canned salmon wraps

(serves 4)

  • 3 cans (170 g each) salmon, skin and bones removed
  • 3 spring onions, finely chopped
  • 60 ml mayonnaise
  • juice of half a lemon
  • salt and freshly ground black pepper to taste
  • 4 tortillas
  • big handful of fresh rocket

Combine the salmon, spring onions, mayonnaise and lemon juice. Season with salt and pepper. Follow the instructions on the packaging and heat the tortillas in the microwave oven. Put fresh rocket on every tortilla, and then some of the salmon mixture. Roll the tortillas and slice in half.
