Cucumber with snoek paté

(about 14 slices)

  • 400 g smoked snoek
  • 60 ml mayonnaise
  • 30 ml tomato sauce
  • 30 ml lemon juice
  • 250 ml cream
  • 4 spring onions, chopped
  • salt and freshly ground black pepper to taste
  • 1 cucumber
  • 2 crotin goat’s milk cheeses, sliced
  • caper berries, to garnish

Remove the snoek’s skin. Flake the fish and remove any bones. Chop the fish finely in your food processor. Add the mayonnaise, tomato sauce, lemon juice and cream. Mix well. Take out of the food processor and fold in the spring onions. Season with salt and pepper. Cut the cucumber into thick slices. Put a slice of cheese on top of each one. Spoon a teaspoonful of the snoek onto every slice and garnish with a caper berry.
