Grilled sardines with salad

(Serves 6)

  • 12 sardines
  • 30 ml coarse salt
  • 30 ml olive oil
  • 30 ml olive oil
  • 2 green peppers, cut into thick strips
  • Salt and freshly ground black pepper to taste
  • Lemon wedges, to serve

Rinse sardines and remove scales. Sprinkle coarse salt over and let stand for 1 hour. Rinse well. Sprinkle 30 ml olive oil over and rub it in well all the way around. Braai sardines over warm coals for about 4 minutes to a side, or grill for 4 – 5 minutes to a side under the oven’s grill. Heat 30 ml olive oil in a pan and fry peppers until browned and soft. Season with salt and black pepper. Put peppers on sardines and serve with lemon, Portuguese salad and rolls.

Portuguese salad

  • 4 tomatoes, quartered
  • Olive oil to taste
  • 1 red onion, cut into rings
  • 50 g stoned olives
  • Olive oil for sprinkling
  • Salt and freshly ground black pepper to taste

Combine tomatoes and olive oil. Arrange onion rings and olives on top and sprinkle a little olive oil over. Season with salt and black pepper.
