Spaghetti with tuna meatballs

(serves 4)

  • 15 ml olive oil
  • 1 onion, finely chopped
  • 1 clove garlic, finely chopped
  • 2 tins chopped tomatoes
  • salt and freshly ground black pepper to taste
  • 3 tins tuna in oil
  • crumbs of 3 slices of white bread
  • 15 ml lemon juice
  • 1 egg
  • 1 pack spaghetti

Heat the olive oil in a saucepan. Fry the onion and garlic until soft and transparent. Add the tomatoes and season with salt and black pepper. Let boil uncovered until thickened. Drain the tuna, but retain the oil. Flake the fish with a fork in a mixing bowl. Add the breadcrumbs, lemon juice and egg. Season with salt and black pepper. Shape into balls. Heat the tuna oil in a pan and fry the balls for about 5 minutes. Pour the tomato sauce over the meatballs. Cook the spaghetti according to the instructions on the pack. Spoon the meatballs and sauce over the spaghetti and serve.
