This can be pudding or breakfast

(4 servings)

  • 200 g dried peaches
  • 1 vanilla pod, cut open lengthwise
  • 650 ml water
  • 30 ml honey
  • 50 g shelled almonds, roasted

Place the peaches, vanilla pod and water in a pot. Cover and bring to the boil. When it's boiling, turn down the heat and simmer for 1 hour. Remove the vanilla pod and add the honey. Serve with Greek yoghurt and a little honey. Sprinkle almonds on top.
