Stewed peaches with almonds

This can be pudding or breakfast
(4 servings)
- 200 g dried peaches
- 1 vanilla pod, cut open lengthwise
- 650 ml water
- 30 ml honey
- 50 g shelled almonds, roasted
Place the peaches, vanilla pod and water in a pot. Cover and bring to the boil. When it's boiling, turn down the heat and simmer for 1 hour. Remove the vanilla pod and add the honey. Serve with Greek yoghurt and a little honey. Sprinkle almonds on top.
