Halloumi and bread salad

(4 to 6 portions, 20 minutes)
- 45 ml butter
- 150 g sourdough bread, broken into chunks
- 30 ml olive oil
- 180 g halloumi, cut into large pieces
- 45 ml flour
- 300 g cherry tomatoes, halved
- 100 g salad leaves of your choice
- salt and freshly ground black pepper
- juice of 1 lemon
Heat butter in a large frying pan. Add pieces of bread and fry for 5 to 8 minutes or until golden brown and crisp. Set aside. Pour olive oil into the same pan. Roll halloumi in flour and fry for 2 minutes on each side or until golden brown. Remove from pan and fry tomatoes in hot pan for 2 minutes. Mix salad leaves with fried bread, halloumi and warm tomatoes. Season with salt and black pepper. Squeeze lemon juice over the salad and serve.
