Pork sausage roll with tomato chutney

(4-6 portions, 30 minutes)
- 1 onion, finely chopped
- 2 cloves of garlic, finely chopped
- 15 ml dried coriander
- 25 ml oregano, chopped
- 25 ml bacon, finely chopped
- 400 g pork mince
- salt and freshly ground black pepper
- 500 g flaky pastry
- 1 x 400 g bottle tomato chutney
Heat oven to 180˚C. Mix onion, garlic, coriander, oregano and bacon with mince, and season with salt and pepper. Shape mince mixture into a sausage and put in middle of pastry. Fold pastry over the meat and put sausage roll join side down on a baking tray that has been sprayed with non-stick food spray. Bake 20-25 minutes, or until cooked and golden brown. Cut into portions and serve warm with tomato chutney or a sauce of your choice.
