Sausages with tomato and potato

(serves 4)
- 8 beef sausages
- 6 whole cloves of garlic
- 4 potatoes, peeled and thickly sliced
- 2 onions, sliced
- 15 ml olive oil
- 800 g cherry tomatoes
- 125 ml chicken stock
- salt and freshly ground black pepper to taste
- handful fresh basil leaves (optional)
Preheat the oven to 180 °C. Mix the sausages, garlic, potatoes and onions with the olive oil. Put it all in an oven dish and roast for 15 minutes. Now add the tomatoes and stock, season with salt and black pepper and roast for another 20 minutes. Add the basil if you like and serve.
