Steak sandwiches

Ideal for a lunch or a quick supper.
(Makes 2 sandwiches)
- 2 large rosa tomatoes
- 30 ml olive oil
- salt and freshly ground black pepper to taste
- 2 onions, halved and sliced
- 200 g sirloin steak
- juice of half a lemon
- 30 ml basil pesto
- 4 slices Portuguese bread, toasted
- handful of fresh rocket
Pre-heat oven to 180 °C. Halve tomatoes and place in an ovenproof dish. Sprinkle with half the olive oil and season with salt and pepper. Bake for 15 to 20 minutes. While the tomatoes are in the oven, heat the rest of the olive oil in a pan and fry onions for about 30 minutes over a low heat until brown. Halve steak so that you have 2 thinner steaks. Pour lemon juice over meat and season with salt and pepper. Heat griddle pan and fry meat on both sides. (The frying time depends on how you like your steak to be done.) Spread pesto on a slice of Portuguese bread and top with fresh rocket. Add steak and two baked tomato halves. Spoon fried onions over the top and cover with another slice of bread. Serve immediately.
