(serves 6)

  • 60 ml olive oil
  • 6 chicken thighs
  • juice of 1 lemon
  • 2 cloves of garlic, finely chopped
  • 10 ml dried thyme
  • salt and freshly ground pepper to taste

Preheat the oven to 180 °C. Pour olive oil in an oven roasting pan. Put chicken thighs in the pan. Pour lemon juice over and then the garlic and thyme. Season with salt and black pepper. Roast for about 1 hour until the chicken is done and the skin nice and crisp. Serve with mango salsa.

Mango salsa

  • 1 ripe mango, peeled and finely cubed
  • ½ cucumber, pips removed and cubed
  • 2 spring onions, chopped
  • 1 red chilli, chopped
  • handful fresh coriander, roughly chopped
  • juice of 1 lemon

Mix all the ingredients. Let stand for about 15 minutes before serving.
