Apple and feta salad
Foto’s: Micky Hoyle Galery
As child I loved strong cheddar with apple. I'm not usually one for stacks, but this little tower of apple and cheese looks pretty as a starter.
(6 portions)
- 6 apples of your choice
- juice of 1 lemon
- 400 g feta, crumbled
- 200 g celery, sliced
- 100 g walnuts, roughly chopped
- 50 ml olive oil
- 250 g crème fraîche
- salt and freshly ground black pepper to taste
- fresh rocket
Slice apples very thinly and sprinkle with lemon juice. Stack the apples and feta in layers. Sprinkle with celery and walnuts. Mix olive oil and crème fraîche and season with salt and pepper. Serve separately in a bowl. You can also serve fresh rocket with the salad.
