Apple and feta salad with mint

(Serves 4)
- 2 green apples, cut into thin rings
- ½ cucumber, sliced
- 250 g feta, crumbled
- 1 pack (70 g) rocket
- 15 mint leaves
- 250 ml sour cream
- Salt and freshly ground black pepper
Arrange apples, cucumber, feta, rocket and 10 mint leaves in a salad bowl. Finely chop 5 mint leaves. Add to the sour cream and season with salt and black pepper. Sprinkle some of the sour cream over the salad.

Chenin blanc wines are known for their apple flavours. Try Simonsig 2009 Chenin Blanc.
