Tomato and mozzarella salad

Tomato salad is always tasty, especially with cold beef.
(6 to 8 portions)
- 800 g tomatoes (large rosa tomatoes, cherry tomatoes and small rosa tomatoes)
- 150 g soft mozzarella, broken into chunks
- 1 red chilli, sliced into thin strips
- 30 g fresh rocket
Salad dressing:
- 25 ml balsamic vinegar
- 120 ml olive oil
- 30 ml lemon juice
- 2 cloves of garlic, finely chopped
- salt and freshly ground black pepper to taste
Slice the large tomatoes, halve some of the smaller tomatoes and keep the smallest tomatoes whole. Mix tomatoes and rocket and arrange cheese and chilli on top. Mix all the ingredients for the dressing, and sprinkle over salad or serve separately.

Caprese salad is traditionally made from mozzarella, tomatoes and fresh basil. It has been adapted here by replacing the tomato with red peppers and adding steak.
