Cauliflower with cheese sauce Foto’s: Micky Hoyle Galery

One of my favourites. You can serve the cauliflower whole or cut into pieces.

(4 portions)

  • 1 cauliflower
  • 35 g (60 ml) butter
  • 35 g (60 ml) cake flour
  • 400 ml warm milk
  • 150 g cheddar, grated
  • salt and freshly ground black pepper to taste

Heat oven to 160°C. Steam or cook cauliflower until just cooked and put in an ovenproof dish. Melt butter in a saucepan over medium heat, add flour and stir to form a paste. Add milk gradually while stirring. Stir until sauce thickens. Add three-quarters of the grated cheddar and stir until cheese melts. Season with salt and black pepper. Pour cheese sauce over cauliflower and sprinkle the rest of the cheese on top. Put dish in oven until the cheese on top has just melted.
