Stuffed baby potatoes

(Serves 12 as a snack)
Preheat oven to 180 °C. Boil 12 baby potatoes, skin intact, until soft, or use leftover braai potatoes. Cut a little hollow in each one and remove skin of the little off-cut. Mash the off-cuts and combine with 50 g grated cheddar. Finely chop 4 spring onions and add to mixture. Add 15 ml butter and season with salt and freshly ground black pepper. Spoon mixture back into potatoes and grate over about 25 g cheddar. Bake for about 20 minutes and serve warm.
