Stuffed mushroom burger

(serves 4)
- 4 slices brown bread
- 100 g butter
- 1 onion, finely chopped
- 2 cloves of garlic, finely chopped
- 100 g black olives, stoned and halved
- about 12 fresh basil leaves, roughly chopped
- salt and freshly ground black pepper to taste
- 4 large mushrooms
- 4 bread rolls of your choice
- 1 camembert, cut into thick wedges
- basil leaves, to garnish
Preheat your oven to 180 °C. Finely chop the bread in your food processor. Melt the butter (yes, it sounds like a lot!) in a pan. Add the onion and garlic and sauté until soft and translucent. Add the bread crumbs, olives and basil. Season with salt and pepper. Stuff the mushrooms with the filling. Place them in a buttered oven dish and bake for 20 – 25 minutes until done. Remove and put a mushroom on top of each sliced bread roll. Top with one or two wedges of camembert and garnish with extra basil.
