Toasted sandwiches in a pan

(4-6 portions, 20 minutes)
- 45 ml soft butter
- 12 slices white bread
- 60 ml chutney
- 150 g (12 slices) pre-sliced cheddar
- 1 onion, cut into rings
- 2 tomatoes, cut into rings
Heat a griddle pan until moderately warm. Spread butter on bread and turn slices buttered side down. Spread chutney on six slices, and top with a slice of cheese. Divide onion rings between the six slices, followed by tomatoes. Season with salt and pepper. Add another slice of cheese. Put another slice of bread on each of the first six slices. Fry about 5-8 minutes per side, or until bread is golden brown and cheese has melted. Serve warm with salad or ready-made soup.
HINT: If the pan is too warm, the bread will burn before the cheese has melted.
