Welsh rarebit

serves 4 – 30 minutes

  • 15 ml butter
  • 15 ml olive oil
  • 3 leeks, thinly sliced
  • 50 g (55 ml) butter
  • 50 g (90 ml) cake flour
  • 300 ml warm beer
  • 150 g strong cheddar, grated
  • 15 ml English mustard
  • 5 ml Worcester sauce
  • salt and freshly ground black pepper to taste
  • 4 thick slices of white bread, toasted

Heat grill of your oven. Heat butter and olive oil in a pan. Sauté the leeks until soft. Keep to one side. Melt the 50 g butter in a pan and add the flour. Stir to form a smooth paste. Add beer and mix as if making a white sauce. Add cheese, mustard and Worcester sauce. Mix well. Add leeks. Season with salt and black pepper. Divide mixture between the slices of toast and grill until golden brown. Serve warm.
