Ciabatta steak snacks

(4 portions)

  1. 1 French loaf, sliced
  2. 100 ml olive oil
  3. 8 minute steaks
  4. 1 pepper, seeded and cut into small cubes
  5. 250 g white mushrooms, cut into small cubes
  6. juice and zest of 1 lemon

salt and freshly ground black pepper to taste

Heat grill in oven. Place slices of French bread on a baking tray and grill on both sides. Heat about 30 ml olive oil in pan and fry steaks on both sides – about 2 minutes on each side. Heat another 30 ml olive oil in another pan anf fry pepper and mushrooms until soft. Season steaks with salt and pepper and pour lemon juice over the meat. Season cubes of pepper and mushrooms with salt and black pepper. Halve the steaks and place a piece on each slice of bread. Spoon some of the pepper and mushrooms over the top. Top sandwiches with thinly sliced pieces of zest. Serve with the rest of the olive oil.

HINT: Place a thin slice of cheddar on top of each piece of bread and melt under grill in oven.
