Curry mince on roti with sambal

(4-6 portions, 30 minutes)

  • 45 ml olive oil
  • 1 onion, finely chopped
  • 2 cloves of garlic, finely chopped
  • 15 ml masala
  • 30 ml curry powder
  • 500 g mince
  • 250 g mixed vegetables
  • 200 ml beef stock
  • 60 ml chutney
  • 30 ml apricot jam
  • salt and freshly ground black pepper
  • 30 ml olive oil
  • 6 rotis

For the sambal

  • 2 tomatoes, diced
  • 1 onion roughly chopped
  • handful coriander, chopped

Heat olive oil in a medium-size saucepan until warm. Add onion and garlic. Fry lightly for about 5 minutes. Add masala and curry powder. Fry 2 minutes. Add mince and stirfry 10-12 minutes or until meat is cooked. Add vegetables, stock, chutney and jam. Reduce heat and simmer slowly for about 15 minutes. Season well with salt and pepper. Meanwhile, mix the sambal ingredients and set aside. Fry rotis in olive oil according to package instructions and serve warm with mince and sambal.
