Frittata with Spanish sausage and baby tomatoes

(Serves 4 – 6)

  • 30 ml butter
  • 250 g Spanish sausage, sliced
  • 200 g baby rosa tomatoes
  • 6 eggs
  • 125 ml milk
  • Salt and freshly ground black pepper to taste
  • Handful fresh basil, torn

Heat grill of oven. Melt butter in a nonstick pan of about 24 x 4,5 cm of which the handle can go in the oven. Fry sausage and tomato for about 5 minutes. Beat eggs and milk together and season with salt and black pepper. Pour egg mixture over sausage and tomato in the pan. Stir slightly. Just before it starts to set in the middle, you place the pan under the grill for 5 minutes. Remove and let stand for 5 minutes before slipping it out on to a plate. Serve with fresh basil.
