Chicken and bacon parcels

(Serves 4)

  • 8 deboned chicken breasts, skin removed
  • 300 g mozzarella, sliced
  • 16 fresh basil leaves
  • Juice of 1 lemon
  • Salt and freshly ground black pepper to taste
  • 500 g streaky bacon
  • 50 ml olive oil
  • 80 g fresh rocket

Preheat oven to 180 °C. Slice into the chicken breasts. Put a piece of cheese and 2 basil leaves in each slice. Pour over lemon juice and season with salt and black pepper. Wrap parcels in bacon.
