Chicken pie

(4 portions)

1. 30 ml olive oil           
2. 1 onion, finely chopped
3. 2 cloves of garlic, finely chopped
4. 4 deboned, skinless chicken breasts, cut into pieces
5. 1 tin (400 g) cherry tomatoes
6. 1 sheet (400 g) flaky pastry

salt and freshly ground black pepper to taste

Heat oven to 200°C. Heat olive oil in a saucepan. Fry onion and garlic until soft and translucent. Add chicken and brown. Add tomatoes and season with salt and pepper. Simmer until cooked. Place in oven dish and leave to cool. Top with flaky pastry and brush with some beaten egg. Put in hot oven and bake for about 35-40 minutes until pastry is cooked and crisp.

EXTRA: Add fried bacon for extra flavour.
