1. 4 deboned chicken breasts (skinless)
2. 1 large onion, quartered
3. 30 ml olive oil
4. 1 tin (400 g) cherry tomatoes
5. 2 cloves of garlic, crushed
salt and freshly ground black pepper to taste
Heat oven to 180°C. Place the chicken and onion quarters in an oven roasting dish. Sprinkle with olive oil. Season with salt and pepper. Put in hot oven and roast for about 15 minutes. Add the tinned tomatoes and garlic. Roast for another 45 minutes.
EXTRA: Sprinkle a handful of fresh basil over the dish. This is a winning combination with tomato.
