Whole roast chicken with garlic and lemon

(Serves 4 – 6)

  • 2 ml turmeric
  • 2 ml cinnamon
  • 1 chicken
  • 30 ml olive oil
  • Salt and freshly ground black pepper to taste
  • 2 red onions, quartered
  • 3 cloves of garlic, finely chopped
  • 500 ml chicken stock
  • 2 lemons, quartered
  • 100 g stoned green olives

Preheat oven to 200 °C. Combine turmeric and cinnamon. Rub mixture into chicken. Heat olive oil in a pot. Fry chicken on both sides to brown. Season with salt and black pepper. Add onions and cover. Roast in the oven for 30 minutes. Add garlic, stock, lemon quarters and olives and roast uncovered for another 45 minutes.
