My mom loved making bread pudding because it’s so easy. This new version of Banana bread pudding is perfect for anyone who loves bananas. Use a shop bought banana bread and turn it into a pudding.
Enough for 4
• butter for spreading
• 12 slices shop-bought banana bread
• 250 ml cream
• 3 eggs
• 25 g (30 ml) sugar
• 100 g (110 ml) butter
• 2 bananas
• 125 ml cream, whipped
• ground cinnamon for dusting
Heat oven to 180 ºC. Grease 4 ramekins with butter. Spread butter over slices of banana bread and place 3 slices in each ramekin. Whip cream, eggs and sugar together. Pour over bread a little at a time and give cream mixture a chance to soak in. Place ramekins on baking tray and bake for about 35 – 45 minutes until mixture has set.
In the meantime melt the 100 g butter in pan. Peel and halve bananas lengthwise. Fry bananas in butter until nicely browned on both sides. Once the puddings are cooked, remove from the oven. Allow to stand for a couple of minutes.
Place a fried banana on top of each ramekin and spoon over whipped cream. Sprinkle with cinnamon and serve immediately.
Milk tart with a touch of chocolate, and caramel pudding with raspberries… it’s high time the old favourites got an update !
