Frittata with courgettes and ricotta

(Serves 4)

  • 15 ml butter
  • 350 g courgettes, sliced
  • Salt and freshly ground black pepper to taste
  • 6 eggs
  • 125 ml milk
  • 250 g ricotta
  • 100 g parmesan, grated

Preheat oven to 180 °C. Grease a 23 cm oven dish with butter. Melt butter in a pan and fry courgettes for about 2 minutes. Season with salt and black pepper. Beat eggs and milk together. Season with salt and black pepper. Add cheeses and mix well. Put fried courgettes in oven dish. Pour mixture over and bake for 15 minutes. Switch on the grill and grill for 5 minutes.
