Mushrooms with mozzarella

(Serves 4)

  • About 15 ml butter
  • 500 g brown mushrooms
  • 4 tomatoes, sliced
  • 300 g mozzarella, sliced
  • Salt and freshly ground black pepper to taste
  • 50 ml olive oil
  • Handful fresh basil leaves

Preheat oven to 180 °C. Grease an ovenproof dish with butter. Put a mushroom, then a slice of tomato and then a slice of cheese in the bowl. Repeat until everything’s in there. Season with salt and black pepper. Sprinkle olive oil over and bake for about 25 minutes until the mushrooms are soft and the cheese has melted. Sprinkle basil leaves over and serve with bread of your choice.
