Open sandwich with low-fat cottage cheese and cucumber, tomato, chilli and olive oil

serves 4

  • 4 slices of whole-wheat bread, toasted
  • 250 g low-fat cottage cheese
  • 1 cucumber, thinly sliced
  • 2 tomatoes, thinly sliced
  • 2 chillis, finely sliced (optional)
  • 30 ml olive oil
  • salt and freshly ground black pepper to taste

Spread cottage cheese onto bread. Put cucumber, tomato and chilli slices on top. Sprinkle with olive oil. Season with salt and pepper. Serve immediately.
