Open sandwiches with feta, tomato and artichoke

serves 4

  • 4 slices whole-wheat bread, toasted
  • 400 g feta
  • 250 g cherry tomatoes, halved
  • 400 g artichokes, whole
  • salt and freshly ground black pepper to taste
  • fresh parsley

Put some feta, tomato and artichoke on every slice of whole-wheat bread. Season with salt and pepper. Garnish with fresh parsley.
