(30 pizzas of 4 cm each)
Preheat oven to 200 °C. Use a 4 cm cookie cutter and cut 30 rounds out of a 400 g sheet of flaky pastry. Place them on a greased baking tray. Cut 100 g of mozzarella into cubes of about 2 cm. Arrange on pastry rounds. Halve 30 small rosa tomatoes and arrange on top of cheese. Season with salt and freshly ground black pepper. Finely chop about 10 fresh basil leaves and sprinkle over. Bake for 20 – 25 minutes until cooked through and crisp. Garnish with small fresh basil leaves.
